SILO's Challenge Cookbook

     The contributors to this cookbook each have a disability. So do 22 million other Americans who are not currently institutionalized (Cornell, 2008). This cook book is dedicated to those who want to live independently.

     The independent living concept is growing throughout the United States. This cook book will help feed that growth.

      Our cook book is based on three-step recipes. We have tried to keep them as basic as possible while still maintaining food quality, taste, and appearance.

      Most recipes have been inspired by my mom’s cooking. My many years in the food service industry have provided insight on writing and testing recipes. Most recently, our friends from the Longwood school district have provided a tasty beef stew recipe.

Spaghetti and Meatballs

 

Ingredients:

(Tomato Sauce)

(1/4) Cup Olive Oil

(1) Tsp Chopped Garlic

(1/4) Cup Diced Onion

(2) Tsp Italian Blend Seasoning

(2) Tsp Red Wine Vinegar

(1) Sm Can Tomato Paste

(1) Lg Can Crushed Tomatoes

(1) lb Spaghetti (box)

 

Step One:

Combine all ingredients in a saucepan and stir over low heat. Let simmer for 1 hour covered.

 

Step Two:

Prepare meatballs according to cocktail meatball recipe. Make meatballs twice as big when rolling.

Allow extra time for baking. Place

cooked meatballs into sauce and stir gently.

 

Step Three

Cook (1) lb pasta in 4qts boiling water until a la dente (firm to the tooth). Strain pasta and place in large bowl.

Add sauce, meatballs, and parmesan cheese.
